If you know us, you know thereโs always a Philadelphia Eagles game on in the background and these loaded cauliflower nachos are basically our go-to game day snack. They’re easy, shareable, and perfect for eating straight off the pan while yelling at the TV.
What makes these nachos work is the contrast. The cauliflower gets roasted and savory, the cheese melts into every piece, and the fresh toppings keep everything bright and balanced. Jalapeรฑo and peppers add a little heat and sweetness, black beans make it hearty, and the avocado, lime, and sour cream bring that creamy, cooling finish. Every bite hits crispy, melty, fresh, and so satisfying all at once.

First, roast the cauliflower. Preheat your oven to 425ยฐF. Spread the cauliflower florets on a large baking sheet and drizzle generously with olive oil. Season with salt, pepper, paprika, garlic powder, and onion powder. Toss well and spread into an even layer. Roast for 25โ30 minutes, flipping halfway, until the cauliflower is golden and crisp around the edges.
Next, add the nacho toppings. Remove the pan from the oven and scatter the diced jalapeรฑo, sliced mini peppers, black beans, and shredded cheese evenly over the roasted cauliflower.



Now, melt the cheese. Return the pan to the oven for 8โ10 minutes, until the cheese is fully melted and bubbly.
Top with diced avocado, dollops of sour cream, cilantro, green onions, and diced tomato. Finish with a generous squeeze of fresh lime juice and serve immediately.

These are best enjoyed fresh, but leftovers can be stored in an airtight container in the fridge for up to 2 days. Reheat in the oven or air fryer to bring back some crispness. Add fresh toppings after reheating for the best texture.
You can roast the cauliflower in advance, but add the cheese and toppings right before serving for the best texture.
A mix of cheddar and Monterey Jack melts great, but use whatever melts well and tastes good to you.
Theyโre mildly spicy as written. Remove the jalapeรฑo seeds or skip it entirely for a milder version.
