Italian Pasta Salad with Marinated Bocconcini

Pasta salad season is the best season – am I right? Remember the Grinder Sandwich that went viral last year on social media? Well, this Italian Pasta Salad with Marinated Bocconcini reminds me of the viral sandwich, but in salad form. Paired with an Italian dressing that is so good, you can chug it. What I love most about pasta salads is that you can add your favorite ingredients to make them personalized for you and your guests! Don’t like olives? Swap them out for fresh herbs or preserved lemons! Don’t like tomatoes? Swap them for peppers or omit them entirely. There are always ways that you can make a recipe personalized for you!

Italian Pasta Salad with Marinated Bocconcini

Ingredients for the Pasta Salad

  • Bocconcini (I used Tre Stelle)
  • Olive Oil
  • Balsamic Vinegar
  • Basil
  • Salt & Pepper
  • Pasta of choice
  • Salami
  • Cherry Tomatoes
  • Pepperoncini
  • Green Olives
  • Red Onion
  • Cucumbers

Ingredients for Salad Dressing

  • Olive Oil
  • Honey
  • Dijon Mustard
  • Lite Mayo
  • Oregano
  • Salt & pepper
  • Red Wine Vinegar
  • Olive Juice

Ingredients

Pasta Salad

  • 1 box pasta of choice
  • 1/2 cup green pitted olives, halved
  • 1/3 cup pepperoninci's, sliced
  • 1/2 red onion, diced
  • 1 cup salami, cubed
  • 1/2 cup cherry tomatoes, halved
  • 1 bunch fresh basil, chopped
  • 1/2 cup cucumber, chopped

Marinated Bocconcini

  • 1 cup mini bocconcini
  • 1 cup bocconcini
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • salt & pepper

Italian Salad Dressing

  • 1/2 cup lite mayo
  • 1 splash red wine vinegar
  • splash olive juice
  • 1 tbsp honey
  • 1 tsp dried oregano
  • 1 tbsp Dijon Mustard
  • 1 garlic clove, grated
  • salt & pepper

Instructions

  • Bring a large pot of salted water to a boil. Once boiled, cooked pasta according to the box directions. Once cooked, set aside and allow to completely cool.
  • In a small bowl, combine marinated bocconcini ingredients. Mix together until bocconcini is tossed and set aside.
  • In a bowl, combine Italian dressing ingredients. Mix together until combined and set aside.
  • Add all pasta salad ingredients to a bowl, including the marinated bocconcini. Pour Italian dressing overtop and mix together until everything is evenly tossed. Top with fresh pepper and basil. Serve and enjoy!

    Loved it! The dressing in particular was really tasty.

    I don’t eat cheese so I subbed the bocconcini for firm smoked tofu — still marinated it! — it was a great substitution.
