These Greek-inspired lemon potatoes are everything you want in a side dish: crispy edges, tender centers, and bright, garlicky lemon flavor in every bite. Boiling the potatoes first means they roast up perfectly crisp on the outside while staying soft inside. It’s a simple recipe with big flavor, and it’s the kind of dish that disappears fast at any gathering.
Preheat oven to 400F degrees. Line baking sheet with parchment paper. Bring large pot of salted water to boil. Cut potatoes into wedges and add potatoes to boiling water for 8-10 minutes.
Add potatoes to a baking dish and add garlic cloves, olive oil, lemon juice, oregano, paprika and salt & pepper. Mix together and add to oven for 30-35 minutes. Check potatoes halfway.
Remove potatoes from oven and plate. Garnish with fresh thyme, salt & pepper. Serve and enjoy!
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven or air fryer at 400ยฐF for a few minutes to bring back the crispiness โ microwaving will make them soft.
You can boil the potatoes ahead and store them in the fridge for up to a day, then toss with the oil, lemon, and seasonings and roast when ready to serve.
Yes โ red or fingerling potatoes work great here too. Just avoid starchy potatoes like russets, which won’t hold their shape as well in wedges.
Freezing isn’t recommended โ the texture of roasted potatoes gets watery and mushy after thawing. Best enjoyed fresh.
