Sweet Potato Nachos

Looking to up the veggies on your nachos? Try swapping roasted sweet potatoes for chips! The sweet potatoes add a delicious base and you can add your favorite toppings!
Sweet Potato Nachos

Cook Time:40 minutes
Yields: 4

Ingredients

  • 4 sweet potatoes, thinly sliced
  • 2 tbsp olive oil
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp chili powder
  • 2 cups shredded cheese
  • 1 jalapeno, sliced
  • 1 cup black beans
  • 1 ripe avocado, sliced
  • 1/2 cup sour cream
  • 1/2 tsp chili flakes
  • 3-4 bunches green onion, thinly sliced
  • 1 tomato, diced
  • salt & pepper

Instructions

  • Preheat oven to 400F degrees. Line the baking sheet with parchment paper. Thinly slice potatoes and add to a bowl. Add olive oil, garlic powder, onion powder, chili, paprika, salt & pepper. Toss together until coated. Add to lined baking sheet. Bake for 15 minutes.
  • Remove sweet potatoes from the oven. Top with shredded cheese and black beans. Add to oven for 10 minutes.
  • Remove from oven and top with all fresh ingredients. Top with sour cream and add chili flakes on top. Serve immediately and enjoy!

TIPS & NOTES

If you don’t like sweet potatoes – you can swap them out for roasted cauliflower or mini bell peppers!
