Looking to up the veggies on your nachos? Try swapping roasted sweet potatoes for chips! The sweet potatoes add a delicious base and you can add your favorite toppings!

Ingredients
4sweet potatoes, thinly sliced
2tbspolive oil
1tsponion powder
1tspgarlic powder
1tsppaprika
1tspchili powder
2cupsshredded cheese
1jalapeno, sliced
1cupblack beans
1ripe avocado, sliced
1/2cupsour cream
1/2tspchili flakes
3-4bunchesgreen onion, thinly sliced
1tomato, diced
salt & pepper
Instructions
Preheat oven to 400F degrees. Line the baking sheet with parchment paper. Thinly slice potatoes and add to a bowl. Add olive oil, garlic powder, onion powder, chili, paprika, salt & pepper. Toss together until coated. Add to lined baking sheet. Bake for 15 minutes.
Remove sweet potatoes from the oven. Top with shredded cheese and black beans. Add to oven for 10 minutes.
Remove from oven and top with all fresh ingredients. Top with sour cream and add chili flakes on top. Serve immediately and enjoy!
Notes
If you don't like sweet potatoes - you can swap them out for roasted cauliflower or mini bell peppers!
