Whipped Feta & Roasted Olives Recipe

Ingredients

  • 1/2 cup whole green olives, pitted
  • 1/2 cup whole black olives, pitted
  • 3/4 cup olive oil
  • 3-4 bunches thyme
  • 1 tsp flakey salt
  • 1 tsp black pepper
  • 8 oz. feta cheese, crumbled
  • 1/4 cup whipped cream cheese
  • 1/4 cup water
  • 1-2 bunches oregano
  • lemon zest
  • salt & pepper
  • 1 tbsp honey

Instructions

  • Preheat oven to 400F degrees. Add olives to baking dish. Top with 1/4 cup olive oil, salt + pepper. Mix together until all olives are coated evenly. Add thyme. Place in oven for 8-10 minutes. Remove from oven after 10 minutes and set aside.
  • Add crumbled feta, cream cheese, water, 1/2 cup olive oil to a food processor. Process for 2-3 minutes. Add lemon zest, black pepper and honey to the mixture and process for 2 minutes.
  • Add feta dip to a bowl and add roasted olives on top. Also add the olive oil from the olive baking dish on top of the dip. Garnish with thyme, oregano and black pepper. Serve with fresh / grilled bread and enjoy!
