thanks to the viral green goddess salad- I’ll now forever be eating my salads with tortilla chips forever! Except these tortilla chips are homemade!! Chopped Kale Salad Recipe
Ingredients
Salad
- 1/2 cup Parmesan cheese, grated
- 2 bunches of black kale
- 1/2 cup pine nuts
- 1/2 cup pomegranate seeds
- 1/3 cup currents
- 1 cucumber, diced
- 4-5 bunches green onion, diced
Dressing
- 1/2 cup olive oil or grapeseed oil
- 1/4 cup rice vinegar
- 1 tbsp honey
- 1/2 lemon, juiced
- Salt & pepper
Tortilla Chips
- 3-4 tortillas, cut into small triangles
- 1 tbsp olive oil
- Salt
Directions
1. Preheat oven to 375F degrees. Line the baking sheet with parchment paper. Cut tortillas into small triangles. Place on a baking sheet and drizzle with olive oil. Bake for 15 minutes, flip halfway. Remove from oven and salt.
2. Add all salad ingredients to a bowl. Mix together. Add all dressing ingredients to a measuring cup. Mix together. Drizzle salad dressing over the salad. Mix together. Serve with tortilla chips and enjoy!
