Chopped Kale Salad

This Chopped Kale Salad is always a hit- especially in the summer! I love to chop all the ingredients super finely and serve it with homemade tortilla chips!
Chopped Kale Salad

Cook Time:10 minutes
Yields: 4

Ingredients

Salad

  • 1/2 cup parmesan cheese, grated
  • 2 bunches black kale, chopped
  • 1/2 cup pine nuts
  • 1/2 cup pomegranate seeds
  • 1/3 cup currents
  • 1 cucumber, diced
  • 4-5 bunches green onion, chopped

Salad Dressing

  • 1/2 cup olive oil or grapeseed oil
  • 1/4 cup rice wine vinegar
  • 1 tbsp honey
  • 1/2 lemon, juiced
  • salt & pepper

Tortilla Chips

  • 3-4 tortillas, cut into small triangles
  • 1 tbsp olive oil
  • salt & pepper

Instructions

  • Preheat oven to 375F degrees. Line the baking sheet with parchment paper. Cut tortillas into small triangles. Place on a baking sheet and drizzle with olive oil. Bake for 15 minutes, flip halfway. Remove from oven and salt.
  • Add all salad ingredients to a bowl. Mix together. Add all dressing ingredients to a measuring cup. Mix together. Drizzle salad dressing over the salad. Mix together. Serve with tortilla chips and enjoy! 

TIPS & NOTES

Making your own tortilla chips is a game changer for this recipe! I like to make a big batch and store them in an air-tight container or Ziploc bag to save for snacks and other recipes!
