This Lemony & Herby Fried Pickle Dip is everything you love about classic fried pickles, but brighter, fresher, and way more scoopable. Itโs creamy and tangy with finely diced dill pickles, lemon zest and juice, loads of fresh herbs, and just enough garlic to round everything out. On top? A buttery, golden panko โfriedโ topping that gives you that irresistible crunch without turning on a deep fryer. This is so perfect for the Super Bowl (or any game day), parties, or just an easy Sunday dish!
The lemon keeps it from feeling heavy, the herbs add freshness in every bite, and the optional touch of honey lets you customize the balance depending on how tangy or sweet you like your pickles.
This dip hits all the right notes. The sour cream and mayo create a rich, creamy base, while the pickles and pickle juice bring that signature tang. Lemon zest and juice brighten everything up, and fresh dill, chives, and parsley add layers of herby flavor that keep the dip from feeling flat. The crispy panko topping seals the deal, delivering that fried pickle crunch in every scoop.


Make the โfriedโ topping. Preheat a skillet over medium heat. Add the panko bread crumbs and drizzle with the melted butter, lemon zest and salt & pepper. Toast, stirring frequently, until golden brown and crisp, 3-5 minutes. Remove from heat and season lightly with salt and pepper. Let cool completely.
Mix the dip. In a medium bowl, combine the sour cream, mayonnaise, pickle juice, grated garlic, lemon zest, and lemon juice. Stir until smooth. Taste and season accordingly. If you like your base a bit sweeter, add in 1 tbsp of honey.
Add the flavor. Fold in the diced pickles, chives, dill, and parsley. Season generously with salt and pepper, adjusting to taste.
Assemble. Spoon the dip into a serving bowl and sprinkle generously with the crispy panko topping.
Finish & serve. Garnish with extra chives, dill, and a crack of black pepper. Serve chilled with potato chips.


Store the dip (without the topping) in an airtight container in the fridge for up to 3 days. Keep the crispy topping separate at room temperature and add just before serving to maintain crunch.
