Ingredients

BREADCRUMB TOPPING

  • 1 Cup Panko Bread Crumbs
  • 2 Tablespoons Unsalted Butter melted
  • 1 Pinch Lemon Zest
  • Salt & Pepper

DIP

  • 1 Cup Dill Pickles finely diced — use sweet or half sour dill
  • 2 Cups Sour Cream
  • 1 Cup Mayo
  • 1 Teaspoon Pickle Juice
  • 1 Clove Garlic finely grated
  • ½ Zest and Juice of Lemon
  • 1 Handful Fresh Chives finely chopped
  • 1 Handful Fresh Dill finely chopped
  • 1 Handful Fresh Parsley finely chopped
  • Salt & Pepper
  • 1 Tablespoon Honey optional, for extra sweetness

GARNISH

  • Chives chopped
  • Fresh Dill
  • Salt & Pepper

  • Chips

Instructions

  • Preheat a skillet over medium heat. Add the panko bread crumbs and drizzle with the melted butter, lemon zest and salt & pepper. Toast, stirring frequently, until golden brown and crisp, 3-5 minutes. Remove from heat and season lightly with salt and pepper. Let cool completely.
  • In a medium bowl, combine the sour cream, mayonnaise, pickle juice, grated garlic, lemon zest, and lemon juice. Stir until smooth. Taste and season accordingly. If you like your base a bit sweeter, add in 1 tbsp of honey.
  • Fold in the diced pickles, chives, dill, and parsley. Season generously with salt and pepper, adjusting to taste.
  • Spoon the dip into a serving bowl and sprinkle generously with the crispy panko topping.
  • Garnish with extra chives, dill, and a crack of black pepper. Serve chilled with potato chips.
