Instructions
Preheat a skillet over medium heat. Add the panko bread crumbs and drizzle with the melted butter, lemon zest and salt & pepper. Toast, stirring frequently, until golden brown and crisp, 3-5 minutes. Remove from heat and season lightly with salt and pepper. Let cool completely.
In a medium bowl, combine the sour cream, mayonnaise, pickle juice, grated garlic, lemon zest, and lemon juice. Stir until smooth. Taste and season accordingly. If you like your base a bit sweeter, add in 1 tbsp of honey.
Fold in the diced pickles, chives, dill, and parsley. Season generously with salt and pepper, adjusting to taste.
Spoon the dip into a serving bowl and sprinkle generously with the crispy panko topping.
Garnish with extra chives, dill, and a crack of black pepper. Serve chilled with potato chips.
