It’s no secret I’m obsessed with middle eastern cuisine and one of my favorite middle eastern dishes is hummus! Ingredients
1 can of chickpeas
1 lemon, juiced
Salt + Pepper (1 tsp of salt + 1 tsp of pepper)
2 tbsp of paprika
1/4 cup olive oil
1/4 cup of water
1/4 cup of tahini
1 tbsp of garlic, chopped
Toppings:
1 tsp Paprika
1 tbsp of olive oil
2 tbsp of tahini
Parsley
Directions
1. Drain chickpeas from the can and rinse under cold water for 2-3 minutes. In the bowl of the food processor, mix together chickpeas, olive oil, lemon juice, water and tahini. Process for 1 minute on high
2. Scrape the sides of the food processor with a spoon and add in garlic, paprika, salt + pepper. Process for 45 seconds or until the mixture is smooth and creamy
3. If your hummus is too thick add 2-3 tbsp of water and blend for another 30-45 seconds
4. Scrape hummus into a bowl and use your spoon to create an indent on the top of the mixture. This creates a small divot for your olive oil + tahini. Sprinkle parsley and paprika on top
