This salad is hearty thanks to the quinoa and chickpeas, bright and fresh from the lemon dressing and herbs, and has that salty, creamy bite from the feta that ties it all together. It’s meal-prep friendly, comes together in minutes, and gets even better as it sits. Lots of bold, clean flavors in every single bite.
Cook the quinoa according to package instructions and let it cool completely before building your salad. Warm quinoa will wilt the herbs and melt the feta, so patience here makes a big difference.
While the quinoa cools, make your dressing. In a jar, whisk together the olive oil, fresh lemon juice, grated garlic, salt, and pepper. Shake or stir until fully combined.
To a large bowl or keep it layered in the jar for meal prep โ add the cooled quinoa first, followed by the chickpeas, chopped cucumbers, walnuts, diced red onion, mint, parsley, and crumbled feta.
Pour the dressing over the top and toss everything together until well coated. Finish with a generous crack of black pepper and a few extra fresh mint leaves. Enjoy immediately or let it sit for 20โ30 minutes for the flavors to really come together.
Store leftovers in an airtight container in the fridge for up to 4 days. This salad holds up because there’s no lettuce to wilt. Before serving, give it a good toss and add an extra squeeze of lemon juice to brighten it back up. The dressing absorbs into the quinoa as it sits, so a little drizzle of olive oil never hurts either.
According to her former Friends co-stars, yes โ a version of this salad was supposedly her go-to on-set lunch. The internet ran with it, and food bloggers recreated and tweaked it into what’s now known as the “Jennifer Aniston salad.” Whether it’s 100% accurate to her exact recipe, who knows, but it’s delicious either way.
Absolutely. This salad is perfect for meal prep. Make a big batch on Sunday and portion it out for lunches throughout the week. The flavors actually improve after a day in the fridge. Just give it a toss and a little extra lemon before serving.
Yes โ always rinse quinoa under cold water before cooking to remove the natural coating called saponin, which can make it taste bitter. Most store-bought quinoa is pre-rinsed, but a quick rinse doesn’t hurt.
You can, but it’s best served at room temperature or cold. The fresh herbs and feta really shine when the salad isn’t hot, and the contrast of textures is so much better chilled.
