There’s so much going on in the best possible way. The sheet pan eggs are blended with cottage cheese for an extra creamy, custardy texture—no rubbery scrambled eggs here. The bacon comes out perfectly crispy from the oven without any stovetop babysitting. And those caramelized onions are the low-effort, high-reward step that takes the whole sandwich over the top. Preheat oven to 400°F. Line a 9×13 baking sheet with parchment paper and arrange bacon in a single layer. Bake for 20–25 minutes, or until crispy. Set aside.
Reduce oven temperature to 375°F. In a blender, combine eggs, cottage cheese, milk, paprika, salt, pepper, and ½ cup shredded cheese. Blend until completely smooth. Line a sheet pan with parchment paper and pour in the egg mixture. Add in the chopped kale and sprinkle the remaining ½ cup of cheese evenly over the top. Bake for 15–18 minutes, or until set in the center. Let cool slightly, then slice into 12 even squares.


Heat butter and olive oil in a skillet over medium heat. Add onions, season with salt and pepper, and cook, stirring often, for 20–25 minutes until deeply golden and soft. Reduce heat if needed to prevent burning.
Toast the English muffins until golden. Layer each with a square of egg, crispy bacon, caramelized onions, and sautéed kale. Sprinkle with shredded cheese and season lightly with salt and pepper if needed. Serve warm or wrap for meal prep.


Store assembled sandwiches wrapped in foil or in an airtight container in the fridge for up to 4 days. To freeze, wrap each sandwich individually in foil and store in a zip-lock bag or airtight container for up to 2 months. Reheat straight from frozen in the oven at 350°F for about 20–25 minutes, or unwrap and microwave for 1–2 minutes until warmed through.

Cottage cheese adds a creamy, protein-packed richness without making the eggs heavy. When blended smooth, you’d never know it’s in there — it just makes the eggs softer and more custardy than a standard scramble or baked egg.
Really well, actually. Wrap them in foil and reheat in the oven for the best texture, or microwave in a pinch. If microwaving from frozen, loosely wrap in a damp paper towel to keep the egg from drying out.
