CHIPOTLE MAC & CHEESE RECIPE
Not going to lie, the last few days at home have been hard! At times, I definitely feel myself in a “creative funk” when it comes to curating content & recipes. However, speaking with you guys via DM and IG stories has been super helpful in helping me be productive and create content! I shared some of my tips & feelings on my IG story and would love to hear how you guys have been keeping busy. In the meantime, stay home and enjoy my chipotle Mac & cheese recipe! Chipotle Mac & Cheese

Ingredients
- 1 package of elbow macaroni noodles
- 3 cups of whole milk
- 3 cloves of garlic, minced
- 1-3 chipotle chilies in adobo sauce (depending how spicy you want it)
- 3 tbsp of flour
- 1 tsp of paprika
- 3 cups of shredded cheddar cheese
- 1/2 cup butter
- Salt & pepper
Directions
- Fill a large pot with lightly salted water for the macaroni. When water boils, pour in macaroni noodles and cook until pasta is al dente
- While pasta is cooking, in a large sauce pan, melt butter and stir in garlic and chipotle chili’s for about five minutes (if you don’t want the sauce very spicy use only 1 chipotle). Add in flour.
- Whisk in milk (1/2 cup at a time) and stir in paprika, salt & pepper. Bring the sauce mixture to a simmer (do not boil), whisking constantly until thickened
- Whisk in cheese (1/2 cup at a time) and stir until cheese has melted and the sauce is thick & smooth (3 to 5 minutes)
- Pour the sauce over the macaroni in the pot (I like to leave in 1/2 cup of the pasta water) and stir until all the noodles are coated
- Sprinkle some extra cheese on top and enjoy! xx
