Lemony Green Pasta

This lemony green pasta is bright, fresh, and so incredibly satisfying! A vibrant blended green sauce packed with herbs and finished with a big squeeze of lemon that coats every strand of pasta beautifully. Simple ingredients, seriously delicious results.

Yields:

Ingredients

1 box spaghetti
1 shallot, chopped
2 cloves garlic, chopped
1/4 cup olive oil, divided
1 1/2 cup frozen spinach
1/2 lemon, juiced
1 tsp salt
1 tsp black pepper
1/2 cup pasta water, divided
1/4 cup white wine
1/2 cup unsalted butter, cubed, divided
1 tbsp basil paste
1/4 cup parsley, chopped
1 tsp chili flakes

Instructions

Bring a large pot of salted water to boil. Add in pasta and cook to box instructions. Reserve 1/2 cup of pasta water.
Add 1 tbsp olive oil to a pot and add in shallot and garlic. Cook for 3-4 minutes until garlic & shallots are cooked down. Add in frozen spinach, 1/4 cup pasta water and mix together until combined. Add in wine and 1/4 cup of cubed butter. Mix together until butter is melted. Add in more pasta
Add in cooked pasta to the sauce and add in basil paste, 1/4 cup butter and fresh parsley. Mix together until combined. Add in olive oil and lemon juice and mix.
Plate pasta and garnish with fresh parsley and chili flakes. Enjoy!
