Fennel, Date,ย & Citrus Salad with a Creamy Tahini Dressing

Bright and refreshing, this Fennel Date Citrus Salad offers the perfect balance of sweet, tart, and creamy flavors. Crisp fennel, juicy citrus, and chewy dates create a satisfying and light texture mix. Topped with a luscious creamy tahini dressing, it adds a beautiful pop of color and flavor to any table. Trust me, once you try the dressing, youโ€™ll want to drizzle it on everything from roasted veggies to grain bowls!

Why This is Delish

This salad is a total showstopper. The combination of sweet dates, tart citrus, and anise-y fennel creates layers of flavor that feel sophisticated but come together in minutes. The tahini dressing brings a nutty creaminess that balances the brightness of the oranges and lemon juice perfectly. It’s the kind of dish that looks like you spent hours on it but requires almost zero cooking. Whether you’re serving it as a side at a dinner party or eating it straight off the platter with a fork, it just works.

How to Make Fennel Date Citrus Salad with Creamy Tahini Dressing

Salad

  • Layer the fennel, citrus slices, dates, red onion, and fresh herbs on a large serving platter.
  • Sprinkle with slivered almonds.
  • Use leftover orange peels to squeeze excess juice over the salad.
  • Season with salt and pepper.

Dressing

  • In a medium-sized bowl, whisk together tahini, lemon juice, date syrup, olive oil, and grated garlic.
  • Gradually add water until smooth and the dressing is thin and smooth in consistency.
  • Season with salt and pepper.

To Serve

  • Drizzle the tahini dressing over the top of the salad just before serving.
  • Finish with a few cracks of black pepper and flaky salt.
  • Enjoy!

Variations That Spice Fennel Date Citrus Salad Up

  • Swap the blood oranges and Cara Cara for grapefruit or navel oranges depending on what’s in season.
  • Add sliced avocado for extra creaminess and richness.
  • Toss in some arugula or mixed greens to bulk it up into a more substantial salad.
  • Top with crumbled feta or goat cheese for a salty, creamy contrast.

Substitutions For Your Dietary Needs

  • Swap the date syrup for maple syrup or honey if you can’t find Silan.
  • Use sunflower seeds or pumpkin seeds instead of slivered almonds to make it nut-free.
  • Any sweet citrus works here โ€” navels, mandarins, or even pomelo are all great options.

Recipe Hacks & Tips

  • Slice the fennel as thinly as possible โ€” a mandoline makes this effortless and gives you those beautiful, delicate shavings
  • Make the tahini dressing ahead of time and store it in the fridge; it keeps well for up to a week
  • Don’t dress the salad until right before serving to keep everything crisp and fresh
  • Taste the dressing as you go โ€” tahini brands vary in bitterness, so you may want a touch more lemon or date syrup to balance

How to Store Leftovers

This salad is best enjoyed fresh, but if you have leftovers, store the undressed salad and dressing separately in airtight containers in the fridge for up to 2 days. The fennel and herbs will soften once dressed, so keep them apart until you’re ready to eat. The tahini dressing will thicken in the fridge โ€” just whisk in a little water to loosen it back up before serving.

Common Questions

Can I make this salad ahead of time?

Yes โ€” you can prep all the components ahead. Slice the fennel, segment the citrus, chop the dates and herbs, and make the dressing up to a day in advance. Store everything separately and assemble just before serving for the freshest result.

What is date syrup and where can I find it?

Date syrup, also called Silan, is a thick, naturally sweet syrup made from dates. It has a rich, caramel-like flavor that works beautifully in dressings and sauces. You can find it at Middle Eastern grocery stores, Whole Foods, or online. Maple syrup makes a good substitute if needed.

My tahini dressing turned thick and clumpy โ€” what happened?

This is totally normal! Tahini can seize up when it hits cold water or acid. Just keep whisking and add warm water gradually, one tablespoon at a time, until it loosens into a smooth, pourable consistency. It will come together.

Can I use a different nut or seed instead of slivered almonds?

Absolutely. Toasted pine nuts, pistachios, pumpkin seeds, or even crushed walnuts all work wonderfully here and add great texture and flavor.
