Falafel Bowl with Homemade Hummus, Tahini, Glazed Carrots + Roasted Veggies Recipe

Falafel Bowl with Homemade Hummus, Tahini, Glazed Carrots + Roasted Veggies Recipe

Tahini Glazed Carrots + Roasted Veggies
Ingredients
1 bunch of carrots
1 can of Artichokes
1/4 cup of tahini
2 tbsp of Extra Virgin Olive Oil
Salt + Pepper to taste
1 lemon
1/2 zucchini
1/2 red pepper
1-2 tbsp of water
Directions
1. Preheat oven to 400F degrees. Line a baking sheet with parchment paper
2. Cut and wash lemon, artichokes, zucchini and red pepper, set aside. Wash carrots but do not cut them (I like to leave them as is)
3. Evenly distribute veggies including lemon on baking sheet and drizzle olive oil + salt and pepper over the veggies
4. Roast veggies for 20-25 minutes. Or until crispy / cooked to your liking. Meanwhile in a bowl combine tahini and water and mix. If your tahini is already a creamy mixture you do not need to add water. If tahini is thick, add water
5. Remove veggies from oven and set aside. Once cool, drizzle the tahini on top of the carrots. Top with salt + pepper to taste
ASSEMBLING FALAFEL BOWL
Ingredients
1 handful of mixed greens
1/4 cup hummus
5 falafel balls
Roasted veggies + tahini glazed carrots
1 tsp of olive oil
1. In a bowl place a handful of mixed greens in the centre. Add 1/4 cup of hummus on top of the greens (optional: I added a few extra chickpeas and paprika on top)
2. Place falafel and mixed veggies around the greens. I like to place the tahini glazed carrots in the centre.
3. Squeeze the roasted lemon (from our roasted veggie tray) over the salad with 1 tsp of olive oil.
4. Enjoy! Xx
