One of favorite dishes that Iโve made to date! I hope you guys enjoy the recipe. As always, sending you all my love and hope youโre staying healthy, safe and happy during this difficult time ๐ donโt forget to save and share the recipe below! ps- for this recipe I used my leftover hummus (recipe in a few posts back) and frozen falafel I found in the freezer section at my grocery store. Soon, Iโll make some homemade falafel! ๐ฅ xx โฃ

Tahini Glazed Carrots + Roasted Veggies โฃ

Ingredients โฃ
1 bunch of carrots โฃ
1 can of Artichokes โฃ
1/4 cup of tahini โฃ
2 tbsp of Extra Virgin Olive Oil โฃ
Salt + Pepper to taste โฃ
1 lemon โฃ
1/2 zucchini โฃ
1/2 red pepperโฃ
1-2 tbsp of water โฃ
Directionsโฃ
1. Preheat oven to 400F degrees. Line a baking sheet with parchment paper โฃ
2. Cut and wash lemon, artichokes, zucchini and red pepper, set aside. Wash carrots but do not cut them (I like to leave them as is) โฃ
3. Evenly distribute veggies including lemon on baking sheet and drizzle olive oil + salt and pepper over the veggies โฃ
4. Roast veggies for 20-25 minutes. Or until crispy / cooked to your liking. Meanwhile in a bowl combine tahini and water and mix. If your tahini is already a creamy mixture you do not need to add water. If tahini is thick, add water โฃ
5. Remove veggies from oven and set aside. Once cool, drizzle the tahini on top of the carrots. Top with salt + pepper to taste โฃ

ASSEMBLING FALAFEL BOWL โฃ

Ingredientsโฃ
1 handful of mixed greens โฃ
1/4 cup hummus โฃ
5 falafel balls โฃ
Roasted veggies + tahini glazed carrots โฃ
1 tsp of olive oil โฃ
โฃ
1. In a bowl place a handful of mixed greens in the centre. Add 1/4 cup of hummus on top of the greens (optional: I added a few extra chickpeas and paprika on top) โฃ
2. Place falafel and mixed veggies around the greens. I like to place the tahini glazed carrots in the centre. โฃ
3. Squeeze the roasted lemon (from our roasted veggie tray) over the salad with 1 tsp of olive oil. โฃ
4. Enjoy! Xx
