Baked Brie with Sugared Cranberries

  • 1 container puff pastry dough
  • 1 brie wheel
  • 4 tbsp honey, divided
  • 1/2 cup almonds, divided
  • 1 cup sugar
  • 1/2 cup water
  • 1 package cranberries
  • 1 egg, beaten
  1. Preheat oven to 350F degrees. Line baking sheet with parchment paper. Add pastry dough to baking sheet and place Brie wheel in the centre. Fold in all edges of the puff pastry to the centre. Smooth any gaps in the dough.

  2. Crack egg into bowl and whisk. Brush yolk all over the pastry dough. Top with 2 tbsp honey & 1/2 cup almonds. Bake for 20-25 minutes until pastry dough is cooked and golden brown.

  3. While Brie is cooking, heat saucepan over medium heat and add 1/2 cup water and 1/2 sugar to the saucepan. Mix together until sugar has dissolved. Add in package of cranberries and mix together for 3-4 minutes. Stirring frequently.

  4. Remove cranberries from saucepan and drain excess water. Coat cranberries in 1/2 cup sugar. Remove Brie from oven. Top with sugared cranberries and honey. Serve immediately and enjoy!
