Bacon Wrapped Egg Cups Recipe
One of the most common recipe requests that I receive are for a quick and healthy breakfast option. As you know, I am always on the go and it’s very common that sometimes I miss breakfast due to *sleeping in*. However, my Bacon Wrapped Egg Cups Recipe are the perfect breakfast option when you’re running late out the door. (Bonus, they are very easy to Meal Prep and will last you ALL week)! Bacon Wrapped Egg Cups Recipe
Ingredients:
- 12 Strips of Bacon
- 12 Large Eggs
- Salt & Pepper
- Optional: Lite Mozzarella Cheese
Directions:
- Preheat oven to 400ºF and spray a nonstick muffin tin with cooking spray and set aside.
- Use one piece of bacon per muffin, and wrap around the tin to completely cover the sides.
- Crack 1 egg inside of each bacon cup. If you’d like to add cheese sprinkle a bit on top of each egg.
- Bake for 10-15 minutes depending on how you like your eggs cooked.
- Season with salt & pepper. Enjoy!
