Honey Citrus Glazed Carrots are zesty, flavor-packed, and simple to make. It is one of my favorite dishes to cook, especially when I feel a little fancy, and I serve them over a bed of gut-healthy Greek yogurt. The combination truly makes for a mouthwatering first bite.

These glazed carrots make for a nutritious yet delicious side dish that pairs well with numerous proteins. In addition, the root vegetables are topped with my delectable hot honey. Homemade Hot Honey

Without a doubt, the star of this side dish is my homemade hot honey. It is the ideal combination of sweet and savory flavors, featuring fresh chilis, apple cider vinegar, crushed red pepper flakes, and of course, honey. This concoction is exceptionally straightforward to make and reusable for future meals. I tend to make it in bulk to add it to my avocado toast, cheeseboards, and even pizza!

How to Make Honey Citrus Glazed Carrots

Preheat oven to 375F degrees. Line baking dish with parchment paper. Peel and wash carrots and pat dry. Add to baking dish.

Combine olive oil, honey, orange + lime juice, salt & pepper to a small bowl. Mix together until combined. Pour overtop of carrots and toss together until evenly coated. Roast for 40-45 minutes until carrots are cooked to liking. Flip halfway.

Ten minutes before carrots are done in the oven, add greek yogurt to a plate. Smooth out using the back of a spoon. Grate over garlic, lime zest and orange zest. Mix together until combined. Remove carrots from oven and add overtop of the yogurt.

Top carrots with salt, pepper, currents, crumbled feta, pine nuts and chopped parsley.

Optional: drizzle hot honey over top. Serve immediately and enjoy!
