Ginger Molasses Cookies

Ginger Molasses Cookies

Ingredients

Serves 6

  • 4 1/2 cups of all-purpose flour 
  • 8 oz. room temperature butter (1 1/2 cup)
  • 1/2 tsp salt 
  • 2 cups white sugar, divided
  • 1 cup brown sugar
  • 2 eggs
  • 1/2 cup cooking molasses 
  • 5 tsp baking soda
  • 1 tbsp ground ginger
  • 2 1/2 tsp ground cinnamon 
  • 1 tsp ground cloves
Directions

1. Preheat oven to 350F degrees and line 2 baking sheets with parchment paper. In a large bowl, mix together all dry ingredients (flour, sugar, salt, baking soda, cinnamon, ground cloves and ground ginger). Set aside.

2. Add softened butter, brown sugar and 1 cup of white sugar to the stand mixer and cream together on medium-high speed until mixture is light and fluffy. Make sure to scrape down the sides as needed. Add in eggs, molasses and mix together on medium-low speed until combined. Slowly add in dry mixture, 1 cup at a time until all dry mixture is added in. 

3. Let the dough chill for 1 hour or until dough is completely chilled. 

4. Add 1 cup of sugar to a small bowl. Roll dough into small balls (about 1 1/2 tsp / cookie) and add dough into the bowl of sugar to coat. Makes sure dough is completely coated. Add dough to prepared baking sheet. 

5. Bake for 10-12. At the last minute, remove from oven and lightly bang the baking tray on a cooking wire (this helps crack the cookies). Place back into the oven for 1 minute. Remove from oven and let cool completely (15-20 minutes). Serve and enjoy!
