Cooking in the kitchen is the most fun activity for my husband and me. Even though I lean into cooking as a career, my husband teaches me so much and this dish is truly a winner. On our food journey, my husband and I find joy and connection in the kitchen. This time, we delved into the creation of a delicious shrimp pasta that embodies the essence of togetherness: Creamy Tomato Shrimp Pasta. This pasta will show you that you never need to buy canned pasta sauce again, and how the tomatoes cook down into the most flavorful, creamy, and perfect sauce!
The combination of garlic, aromatic herbs, a hint of red pepper flakes, and Parmesan cheese travels through every pasta noodle, making every bite delicious and perfect. The marriage of perfectly cooked shrimp and al dente pasta creates an amazing hearty bite, while the creamy tomato sauce ties all of the elements together. Bring a medium pot of salted water to a boil. Add your pasta and cook according to box instructions. Reserve ยฝ cup of pasta water.
In a medium saucepan, add olive oil and seasoned shrimp. Cook the shrimp until pink on both sides, then remove from the pan and set aside.
Add olive oil and garlic to the same saucepan. Add the cherry tomatoes and cook for 6โ8 minutes. Season with salt and pepper. Once the tomatoes have cooked down and broken apart, add the spinach and mix together for 4โ5 minutes.
Add the cooking cream and mix until combined. Let the sauce cook for 4โ5 minutes, seasoning as necessary, then stir in the Parmesan cheese. Add the shrimp back in and mix.
Add the pasta directly to the sauce, using the reserved pasta water as needed to loosen it up. Plate and top with fresh Parmesan, basil, black pepper, chili flakes, and a drizzle of olive oil. Serve and enjoy!
Store leftovers in an airtight container in the fridge for up to 3 days. When reheating, add a splash of cream or pasta water to loosen the sauce, as it will thicken in the fridge. Reheat gently on the stove or in the microwave until warmed through.
The sauce can be made a day in advance and stored in the fridge โ just reheat gently before tossing in freshly cooked pasta and shrimp. Shrimp is best cooked fresh for the best texture.
Yes! Just make sure it’s fully thawed and patted dry before cooking so it sears instead of steams.
This dish isn’t ideal for freezing โ the cream sauce can separate and the pasta can turn mushy when thawed. It’s best enjoyed fresh or as fridge leftovers within a few days.
