How to Make Creamy Tomato Shrimp Pasta

Bring a medium pot of salted water to a boil. Add your pasta and cook according to box instructions. Reserve ยฝ cup of pasta water.
In a medium saucepan, add olive oil and seasoned shrimp. Cook the shrimp until pink on both sides, then remove from the pan and set aside.

Add olive oil and garlic to the same saucepan. Add the cherry tomatoes and cook for 6โ€“8 minutes. Season with salt and pepper. Once the tomatoes have cooked down and broken apart, add the spinach and mix together for 4โ€“5 minutes.

Add the cooking cream and mix until combined. Let the sauce cook for 4โ€“5 minutes, seasoning as necessary, then stir in the Parmesan cheese. Add the shrimp back in and mix.

FOR THE PASTA

  • 1 Box Pasta of choice
  • 1 Cup Cherry Tomatoes sliced
  • 2 Handfuls Spinach
  • 1 Cup Parmesan Cheese divided
  • 1 Tablespoon Olive Oil
  • 1 Handful Fresh Basil chopped
  • 1 ยฝ Cups Cooking Cream
  • 1 Clove Garlic chopped
  • Salt & Pepper
  • ยฝ Teaspoon chili flakes optional

FOR THE SHRIMP

  • 1 Pound Raw Shrimp peeled and deveined shrimp (buy frozen)
  • 1 Tablespoon Olive Oil
  • Salt & Pepper
  • ยฝ Teaspoon Chili Flakes

FOR GARNISH

  • Parmesan Cheese
  • Basil chopped

Instructions

  • Bring medium pot of salted water to boil. Add your pasta and cook according to box instructions. Reserve 1/2 cup pasta water.
  • In a medium size saucepan, add in olive oil and seasoned shrimp. Cook shrimp until itโ€™s pink on both sides. Remove from pan and set aside.
  • Add in olive oil and garlic to the sauce pan. Add in Cherry tomatoes and cook for 6-8 minutes. Season with salt & pepper. Once tomatoes have cooked and broken down, add in spinach and mix together for 4-5 minutes.
  • Add in cooking cream and mix together until combined. Let sauce cook for 4-5 minutes, season as necessary and add in Parmesan cheese. Add shrimp back in and mix.
  • Add in pasta directly to the sauce and add in pasta water as needed.
