๐Ÿ‘ฉโ€๐Ÿณ How to Make Creamy Lemon Chicken Thighs with Sun-Dried Tomato Orzo

Season the chicken thighs with paprika, onion powder, garlic powder, lemon juice, salt, and pepper, coating them evenly. Heat a large skillet over medium-high heat with a drizzle of olive oil and sear the chicken thighs for 4โ€“5 minutes per side, until golden and mostly cooked through. Remove the chicken and set aside.

In the same pan, add olive oil, sun-dried tomatoes, and diced onion. Cook for 3โ€“4 minutes until the onion softens, then add garlic and cook for another minute. Stir in the lemon juice, lemon zest, chicken broth, and cooking cream. Mix well and add the orzo, reducing the heat to medium-low. Simmer for 10โ€“12 minutes, stirring occasionally, until the orzo is tender.

Stir in parmesan until creamy, and season with salt and pepper. Nestle the chicken thighs back into the pan, cover, and cook another 5โ€“7 minutes until fully cooked and sauce is thickened. Finish with chopped parsley and serve warm.

๐Ÿช„ Tips and Tricks

  • Sear the chicken well for a golden crustโ€”it adds flavor to both the chicken and sauce.
  • Stir the orzo occasionally to prevent sticking but gently, so it stays tender.
  • Adjust cream and broth ratios if you like a saucier or thicker dish.

๐Ÿ—’ Variations

  • Swap chicken thighs for chicken breasts if you prefer leaner meat.
  • Add spinach or peas to the orzo for extra greens.
  • Use a mix of cream and half-and-half for a lighter sauce.

๐Ÿ—’ Substitutions

  • Parmesan โ†’ Pecorino Romano for a sharper flavor.
  • Sun-dried tomatoes โ†’ roasted red peppers for a milder sweetness.
  • Cooking cream โ†’ coconut cream for a dairy-free version.

๐Ÿ‘ How to Store Leftovers
Store in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave, adding a splash of chicken broth or cream to loosen the sauce.

This was ABSOLUTELY delicious! Used boneless chicken breasts, lightly pounded (to make even) so they didn’t dry out did a quick sear. Also used the barista oat milk mixed with some heavy cream to save calories! Can’t believe how much flavor it had for such little effort!

Side note though: The written instructions don’t mention adding the sundried tomatoes when adding the onion. It mentions it up above in the explanation, but not in the actual instructions (Step 2). I knew when to add them from common sense, but figured I would let you know before a negative Nancy gets in your comments about it!
