Preheat oven to 350F degrees. Slice apples and add to a large mixing bowl. Add all of the apple filling ingredients and mix together until the apples are evenly coated. Coat the bottom of the baking dish with butter and add apples to the baking dish. Spread evenly across the dish.
In a large mixing bowl, combine all crumble ingredients and mix together until combined. Add crumble on top of apples and spread out evenly. Drizzle honey over top and add crumbled nuts.
Bake for 35-40 minutes until the crumble is crispy. Remove from oven and drizzle with more honey. Let sit for 5-10 minutes before serving. Serve with whipped cream or ice cream/gelato. Enjoy!
