Whipped Feta Dip with Roasted Tomatoes Recipe

Ingredients

  • Roasted Tomatoes
  • 1 package tri-colour cherry tomatoes
  • 1/3 cup extra virgin olive oil
  • Salt + pepper
  • Whipped Feta Dip
  • 8 oz feta cheese, crumbled
  • 1/2 cup extra virgin olive oil
  • 2 tbsp honey
  • 1-2 bunches thyme
  • 1-2 bunches oregano
  • 1/4 cup cream cheese
  • 1/4 cup water
  • Lemon zest
  • Salt + pepper
  • Toasted Baguette
  • 1 baguette, sliced
  • 2 tbsp extra virgin olive oil
  • salt + pepper

Directions

Directions
1. Preheat oven to 375F degrees. Line a baking sheet with parchment paper. Add cherry tomatoes and top with 1/3 cup olive oil, salt and pepper. Bake for 20-25 minutes.
2. Add crumbled feta, cream cheese, water, 1/2 cup EVOO to a food processor. Process for 2-3 minutes. Add lemon zest, black pepper and honey to the mixture and process for 2 minutes.
3. Add feta dip to a bowl and remove roasted tomatoes from the oven. Add roasted tomatoes and olive oil on top of the dip. Garnish with thyme, oregano and black pepper. Serve with grilled bread and enjoy!

*For baguette: slice baguette and place on a baking sheet lined with parchment paper. Preheat oven to 350F degrees. Brush baguette with olive oil, salt + pepper. Place in oven for 10-12 minutes. Enjoy with dip or as crostini’s.
