Add olive oil to saucepan and heat over med-high heat. Add chili flakes and cook for 2-3 minutes. Add tomato paste and cook until toasted -3-4 minutes. Deglaze pan with vodka and simmer for 2-3 minutes. Add cream and mix together until combined. Season with salt & pepper. Add in 1/2 cup Parmesan cheese. Simmer for 8-10 minutes, stirring constantly.
Bring a small pot of salted water to boil. Add cauliflower gnocchi and cook for 5-8 minutes until gnocchi floats to the top. Once cooked, add gnocchi to the vodka sauce with a few tbsp of the boiled water. Toss until completely combined. Cook for 4-5 minutes.
Plate and top with black pepper and Parmesan cheese. Serve and enjoy!
