Crispy Greek-Inspired Lemon Potatoes

These Crispy Greek-Inspired Lemon Potatoes will be the perfect side dish for the summer!

Ingredients

  • 8-10 Yukon Gold Potatoes cut into wedges
  • 1 Lemon juiced
  • Cup Olive Oil
  • 4-6 Cloves Garlic
  • 2 Tablespoons Dried Oregano
  • 1 Tablespoon Paprika
  • Salt & Pepper
  • Fresh Thyme to garnish

Instructions

  • Preheat oven to 400F degrees. Line baking sheet with parchment paper. Bring large pot of salted water to boil. Cut potatoes into wedges and add potatoes to boiling water for 8-10 minutes.
  • Add potatoes to a baking dish and add garlic cloves, olive oil, lemon juice, oregano, paprika and salt & pepper. Mix together and add to oven for 30-35 minutes. Check potatoes halfway.
  • Remove potatoes from oven and plate. Garnish with fresh thyme, salt & pepper. Serve and enjoy!

Notes

Make sure to boil your potatoes before cooking them! This allows your potatoes to get extra crispy when you bake them.
