Creamy Tomato Shrimp Pasta is the perfect weeknight dinner! Packed with juicy shrimp, sweet tomatoes, and a rich Parmesan cream sauce, it's easy enough for a weeknight and impressive enough for date night.
1PoundRaw Shrimppeeled and deveined shrimp (buy frozen)
1TablespoonOlive Oil
Salt & Pepper
½TeaspoonChili Flakes

Instructions
Bring medium pot of salted water to boil. Add your pasta and cook according to box instructions. Reserve 1/2 cup pasta water.
In a medium size saucepan, add in olive oil and seasoned shrimp. Cook shrimp until it’s pink on both sides. Remove from pan and set aside.
Add in olive oil and garlic to the sauce pan. Add in Cherry tomatoes and cook for 6-8 minutes. Season with salt & pepper. Once tomatoes have cooked and broken down, add in spinach and mix together for 4-5 minutes.
Add in cooking cream and mix together until combined. Let sauce cook for 4-5 minutes, season as necessary and add in Parmesan cheese. Add shrimp back in and mix.
Add in pasta directly to the sauce and add in pasta water as needed.
Plate and top with fresh Parmesan, Basil, black pepper, chili flakes and a drizzle of olive oil. Serve and enjoy!
