Classic Fish Cooked in Parchment

This classic fish en papillote recipe steams fish and fresh vegetables in parchment paper, sealing in natural flavors and moisture for a light, healthy, and flavorful meal with minimal effort.

Ingredients

For the Cod

  • 2 cod fillets
  • 2 tbsp olive oil
  • Salt & pepper
  • 1 small zucchini sliced
  • 1/3 cup olives halved
  • 1/3 cup cherry tomatoes halved
  • 1/2 lemon juiced & zested
  • 4 lemon slices
  • 1 bunch thyme
  • 1 bunch oregano
  • 1 garlic clove minced

Instructions

  • Preheat the oven to 400°F.
  • Season the cod with olive oil, lemon juice, salt, and pepper.
  • Place each piece of cod in the center of its own large sheet of parchment paper.
  • Add sliced zucchini underneath the cod.
  • Top the cod with cherry tomatoes, olives, lemon wedges, salt, pepper, and a bit more lemon juice.
  • Fold and seal the parchment paper to create a packet.
  • Place the packets on a baking sheet.
  • Bake for 12 to 15 minutes.
  • Remove from the oven and let the packets sit for 2 to 3 minutes.
  • Carefully open the parchment paper, season with additional lemon juice, salt, and pepper.
  • Remove any herbs and enjoy!
