Crispy Rice
1cupricecooked
1tbspsoy sauce
1tspchili oil
1tbspsesame oil
pinchof salt
Salad
1/2head purple cabbagethinly sliced
1medium ripe avocadocubed
1/2large cucumbersliced
4chicken breastscubed
4carrotspeeled for ribbons
2tbspbasilchopped
2tbspcilantrochopped
2tbspmintchopped
Citrus Ginger Miso Dressing
1/2cupolive oil
1blood orangejuiced
1tspgingergrated
2tbsphoney
1tbspmiso paste
1tbspdijon mustard
1garlic clovegrated
salt & pepper
1.5tbspapple cider vinegar
Instructions
Crispy Rice
Preheat oven to 400F degrees
Line a 9x13 baking sheet with parchment paper
Add cooked rice to the lined baking sheet with the rest of the crispy rice ingredients
Mix until combined and bake for 30-35 minutes
Check halfway and mix around
Dressing
Add all salad dressing ingredients into a large measuring cup or bowl
Mix until combined
Taste and season as necessary and set aside

Cut all salad ingredients and add to a large bowl
Once crispy rice is cooked, add on top and drizzle the salad dressing overtop
