Easy Crispy Rice Salad with a Tangy Ginger Miso Dressing

This crispy rice salad combines crunchy baked rice, juicy chicken, and fresh, colorful veggies tossed in a tangy citrus ginger miso dressing. It’s an easy-to-make, vibrant meal that’s bursting with flavor and perfect for any time you want something light yet satisfying.

Ingredients

Crispy Rice

  • 1 cup rice cooked
  • 1 tbsp soy sauce
  • 1 tsp chili oil
  • 1 tbsp sesame oil
  • pinch of salt

Salad

  • 1/2 head purple cabbage thinly sliced
  • 1 medium ripe avocado cubed
  • 1/2 large cucumber sliced
  • 4 chicken breasts cubed
  • 4 carrots peeled for ribbons
  • 2 tbsp basil chopped
  • 2 tbsp cilantro chopped
  • 2 tbsp mint chopped

Citrus Ginger Miso Dressing

  • 1/2 cup olive oil
  • 1 blood orange juiced
  • 1 tsp ginger grated
  • 2 tbsp honey
  • 1 tbsp miso paste
  • 1 tbsp dijon mustard
  • 1 garlic clove grated
  • salt & pepper
  • 1.5 tbsp apple cider vinegar

Instructions

Crispy Rice

  • Preheat oven to 400F degrees
  • Line a 9x13 baking sheet with parchment paper
  • Add cooked rice to the lined baking sheet with the rest of the crispy rice ingredients
  • Mix until combined and bake for 30-35 minutes
  • Check halfway and mix around

Dressing

  • Add all salad dressing ingredients into a large measuring cup or bowl
  • Mix until combined
  • Taste and season as necessary and set aside

Salad

  • Cut all salad ingredients and add to a large bowl
  • Once crispy rice is cooked, add on top and drizzle the salad dressing overtop
  • Mix until combined
  • Serve and enjoy!
