Ingredients
1tbspolive oil
1garlic clove, chopped
1shallot, chopped
1package spaghetti or bucatini
2 1/2tbspwhite miso paste
1/2stick unsalted butter
1 1/2cuppasta water
1/2lemon, juiced
1cupparmesan cheese, finely grated
If sauce is not thick enough...
1tbspwater
2tbspcornstarch
Instructions
Bring a large pot of salted water to boil. Cook pasta according to box instructions. Reserve 1 1/2 cups of pasta water.
Heat a large saucepan over med-high heat. Add olive oil to pan and add in 1 tbsp butter garlic and shallots. Cook until soft 3-4 minutes. Add in the remainder of butter and lemon juice. Once melted - add in miso paste and pasta water (1/2 cup at a time). Mix together until miso is softened and combined.
Bring to low heat and let sauce simmer. Add in 1/2 cup parmesan cheese. Mix together until combined.
Add pasta to sauce pan and toss together until all noodles are evenly coated. If sauce is not thick enough- combine cornstarch and water and add to mixture. Add 1 tbsp of butter to the pasta, remaining parmesan cheese and black pepper.
Plate pasta and top with parmesan cheese and black pepper. Serve immediately and enjoy!
