There's nothing more delish than crispy air fryer artichokes served over a garlicky yogurt shmear! Talk about the perfect side dish or appetizer!

Ingredients
1canartichokes
2tbspolive oil
2tbspbread crumbs
1/3cupParmesan cheese, freshly grated
1lemon, halved and juiced
1garlic clove, grated
2tbspparsley, chopped
1 1/2cup 2% plain Greek yogurt or Labneh
salt & pepper
Instructions
Add artichokes to a bowl. Remove liquid and pat dry with a paper towel. Add 1 tbsp olive oil, juice or 1/2 lemon, bread crumbs, Parmesan cheese and salt + pepper to artichokes. Mix together.
Add artichokes to the air fryer. Spray artichokes with cooking spray. Bake at 400F degrees for 12 minutes. Check halfway and flip if necessary.
Add yogurt or Labneh to the bowl. Smooth out with the back of a spoon. Add the juice of 1/2 lemon, grated garlic and lemon zest. Mix together and smooth out with the back of a spoon. Top with salt & pepper. Once the artichokes are finished cooking, add them to the plate on top of the yogurt / Labneh.
Finish with olive oil, chopped parsley, salt & pepper and some Parmesan cheese. Serve immediately and enjoy!
Notes
No Air Fryer? No problem! You can make the crispy artichokes in the oven! Cook at 375F degrees for 10-15 minutes, flip half way and enjoy!
