Lemony Green Pasta

Ingredients

  • 1 box spaghetti
  • 1 shallot, chopped
  • 2 cloves garlic, chopped
  • 1/4 cup olive oil, divided
  • 1 1/2 cup frozen spinach
  • 1/2 lemon, juiced
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 cup pasta water, divided
  • 1/4 cup white wine
  • 1/2 cup unsalted butter, cubed, divided
  • 1 tbsp basil paste
  • 1/4 cup parsley, chopped
  • 1 tsp chili flakes

Instructions

  • Bring a large pot of salted water to boil. Add in pasta and cook to box instructions. Reserve 1/2 cup of pasta water.
  • Add 1 tbsp olive oil to a pot and add in shallot and garlic. Cook for 3-4 minutes until garlic & shallots are cooked down. Add in frozen spinach, 1/4 cup pasta water and mix together until combined. Add in wine and 1/4 cup of cubed butter. Mix together until butter is melted. Add in more pasta
  • Add in cooked pasta to the sauce and add in basil paste, 1/4 cup butter and fresh parsley. Mix together until combined. Add in olive oil and lemon juice and mix.
  • Plate pasta and garnish with fresh parsley and chili flakes. Enjoy!
